Patlican Kebab

Ingredients

• Eggplant (Cubed)
Garnish

  • Tomato Wedge (Grilled)
  • Long Chili (Grilled)
    • Parsley chopped
  • Onion sliced
    • Sumak
    • Burgul
    180 grams(30 G Each)
    160 grams (20 G Each)

    • LavashSpicy Bread (Grilled) 60 grams
    Procedure
    • Make 2 flat skewers from Urfa meat and eggplant cubes
  • Each skewer with 3 small koftas of Urfa meat, each kofta 30 grams
    and 4cm long
    • Each skewer with 4 cubes of eggplant, each 20 grams and 4cm long
  • Grill to internal temperature of 75*C and above for food safety
    • Finish with garnishing and serve on wooden plate
